Fazenda Matão, gelegen op hoogtes tussen 790 en 940 m boven zeeniveau, biedt met zijn vruchtbare 'groene struikgewas'-landschap ideale omstandigheden voor de teelt van specialty koffie.

Sinds de overname van het landgoed begin jaren 2000 hebben eigenaar Marco Antonio Guardabaxo en manager Marciano de Jesus de infrastructuur gemoderniseerd, met behoud van een erfenis die teruggaat tot de jaren 1960. Belangrijke innovaties zijn onder meer een modern irrigatiesysteem dat zorgt voor een gelijkmatige ontwikkeling van de kersen en tegelijkertijd waterverspilling aanzienlijk vermindert.

Duurzaamheid staat centraal in de identiteit van Matão. Het team bevordert biodiversiteit, voorkomt bodemerosie en gebruikt biobrandstof van de naburige Fazenda São Domingos. Deze toewijding strekt zich uit tot de gemeenschap, waar 40 seizoensarbeiders een leefbaar loon en veilige werkomstandigheden krijgen.

Deze partij is niet je gebruikelijke Braziliaanse koffie. Verwacht een rijke, zware fermentatie met smaken van zwarte kers, cacao en walnoot.
