Las Etiopes ligt in het dorp El Porvenir, hoog in de bergen van Cajamarca, Peru. De boerderij wordt beheerd door Simon Brown en Merlith Cruz, die het land in 2019 kochten en begin 2020 de eerste bomen plantten. De naam betekent "De Ethiopiërs," een verwijzing naar de zeldzame Ethiopische heirloom-variëteiten die naast de traditionele Caturra groeien op de steile, terrasvormige hellingen van de boerderij.

Rijpe kersen worden met de hand geplukt, in houten tanks gefloten om defecten te verwijderen, vervolgens gepulpt en drie tot vijf dagen in afgesloten vaten gefermenteerd. Het perkament wordt tien tot veertien dagen zorgvuldig gedroogd op overdekte verhoogde bedden, wat resulteert in een schone en levendige kop.

De helft van de acht hectare van de boerderij is bewaard als oerbos, en Simon en Merlith zetten zich in voor duurzame integratie van landbouw in het natuurlijke landschap. Via hun exportbedrijf Chacra ondersteunen ze ook naburige kleine boeren door een directe route naar de markt te bieden, zodat kwaliteit op elk niveau van de toeleveringsketen wordt beloond.
