Carbon negative coffee

Our second rare and acclaimed release from Felipe Arcila and Jardines del Edén. Yet again, we’re showcasing the much sought-after Sidra variety, but this time with an experimental extended fermentation process. In this process the coffee cherries are exposed to a dry aerobic fermentation of 24 hours before being placed inside sealed GrainPro bags for 50 hours at a temperature below 22°c. After this, the whole cherries are placed on raised beds which aid ventilation until an 11% moisture content was achieved.

The result of this meticulous process is a tropical and slightly funky flavour profile, with notes of papaya, apricot and orange.

Though it’s not certified as such, this coffee has all of the necessary organic credentials. The farm's fertile, mineral-rich soil, steady supply of rain, and slightly cooler-than-usual microclimate create an ideal environment for abundant growth. Felipe knows it's important to preserve the farm's unique ecosystem, which is why a lot of the work that takes place at Jardines is about finding ways to create a healthy, low-impact, and closed-loop resource system that allows nature to balance and sustain itself.

For example, the farm has one small waterfall and three water springs that feed its processing operations. They also use biodynamic farming methods, which are designed to promote soil health and biodiversity.

Isabella N. ★★★★★

The EF2 fermentation really shows—papaya note is unmistakable, sitting right under that sweet, fruity acidity. Brewed at 1,800 meters, this Sidra has a silky body that makes it feel fancier than the price suggests. Probably the most memorable bag I’ve opened this season.

John Z. ★★★★★

I brewed this as a pour-over this morning and the papaya note is uncanny—sweet and almost tropical, not at all hidden behind the fermentation. The EF2 process makes it feel juicy and complex without being funky. Already regretting I only grabbed one bag.

Andrew Z. ★★★★★

The EF2 process really shines here—the extended fermentation gives it a juicy, almost wine-like brightness that I didn't expect from a coffee at this altitude. Papaya comes through as a soft, ripe sweetness on the finish, and it brews up clean even as it cools.
