The Papayo coffee variety, mainly found in Huila, Colombia, has mysterious origins. Initially thought to be a Caturra mutation, it is now linked to Ethiopian varieties that somehow made their way to Colombia. Its elongated cherries resemble papaya fruit, hence the name. Jairo has borrowed a winemaking technique—carbonic maceration—using carbon dioxide during fermentation. This creates a complex, enhanced, fruit-driven profile.
