Another new lot for this year from Nancy Hernandez, and potentially our favourite of the year. This Pacas variety showcases plenty of juicy citrus acidity, floral and tea-like characteristics, alongside sweet milk chocolate flavour.

Pacas is a natural mutation of Bourbon, similar to Caturra in Brazil and Villa Sarchi in Costa Rica. Pacas has a single-gene mutation that causes the plant to grow smaller. This is its chief virtue: the plant’s small size leads to higher potential yields and the possibility of placing plants closer together to increase total fruit production on a farm.

The Jazmin farm was built in 2008 by Nancy, whose dream was always to follow in the footsteps of her parents and grandparents by having her own farm. She spent years learning about processing and cultivation on her parents’ farm until her uncle offered her the opportunity to transform what was some disused land into a coffee farm. Just like that, Jazmin was born.

The wash process really lets the Pacas bean shine—bright mandarin zest up front that settles into a silky, clean finish. I’ve brewed it both as pour-over and in my moka pot, and it holds its sweetness beautifully either way. Ground just before brewing, the aroma alone is worth the bag.
