Organic Coffee Carbon negative coffee

This amazing and unique coffee is the result of a cooperative made up of 51 female-led farms, whose cherries are collected from Nwar Ban Gyi village and then processed by highly experienced professionals at The Lady processing facility. Founded in 2018 by Thi Ha Gyawalie and Su Nandar Linn, The Lady supports and champions the efforts of farmers in the Ywangan region, with limited edition lots produced exclusively by women.

Su Nandar Linn's family owns Shwe Ywar Ngan Coffee, a farm, processor, and roaster in Ywangan, Shan State. Her father, Win Aung Kyaw, has been in the coffee business since 1975, playing an instrumental role in the development of Myanmar's coffee industry. Su Nandar Linn, a certified Q grader and processor, continues this commitment to develop the country's specialty industry through The Lady.

This coffee is a honey process with additional carbonic maceration fermentation. Firstly coffee cherries are collected within 18 hours of harvest. After being collected, the cherries are floated to remove any under-ripes and then hand-sorted to remove any other defects. The sorted cherries are then placed in 500-liter one-way valve fitted fermentation tanks for 48 hours before being pulped. Following pulping, the coffee is dried on raised beds for 12-15 days.

Riley M. ★★★★★

The honey carbonic maceration gives it this smooth, syrupy body that I wasn't expecting from a Ywangan lot. Brewed it as a pour-over and the red catuai's sweetness stayed balanced right until the cup went cold. Definitely ordering another bag next month.

Robert R. ★★★★★

The red catuai cultivar really pops here—syrupy sweet with a bright, clean finish that I wasn’t expecting from a honey process. I’ve brewed it both as a pour-over and in my French press, and it holds up beautifully either way. This is the kind of bag I’ll be sad to finish.

Ruby ★★★★★

The honey carbonic maceration really comes through—it's fruity and almost wine-like without being sour. I've brewed it in a V60 and a French press, and both turned out smooth and sweet. This one's a keeper for slow weekend mornings.
