Carbon negative coffee

David Flores and his family, spurred by an unexpected premium for their exceptional coffee, embarked on a journey into the world of specialty coffee production. Driven by curiosity, they dedicated themselves to mastering every aspect of cultivation, from varietal selection and soil health to meticulous harvesting and processing techniques.

Last year, they upgraded their infrastructure, investing in new fermentation tanks, drying beds, and a greenhouse. They now meticulously monitor sugar content, mucilage pH, and moisture levels, ensuring optimal conditions at each stage. This blend of traditional expertise and scientific measurement allows for precise control, highlighting the value of combining both approaches. This year they secured both organic and Rainforest Alliance certifications.

A new addition to our mellow and balanced range, expect notes of blackberry, apple, and milk chocolate, a great everyday coffee.

Jacob ★★★★★

The washed process really lets the bourbon and caturra beans shine—every cup is clean and bright, even as it cools. I’ve brewed it in my pour-over every morning since the bag arrived and it’s consistently smooth with a nice, lingering finish.

Samuel T. ★★★★★

The wet fermentation really brings out the sweetness in this Bourbon and Caturra lot—each cup feels clean and vibrant without any harsh edges. Brewed it as a pour-over at 1750 masl, and the body was surprisingly silky for a washed process. Definitely ordering the next harvest.

Christopher Y. ★★★★★

This Bourbon and Caturra blend from San Jose de Lourdes is incredibly smooth for such a high altitude—the washed process really lets the bright, clean flavors shine through. Brewed a cup this morning and it had none of the harshness you sometimes get at 1750 masl. Definitely ordering more.
