Beliggende i bjergområdet Divinolândia har Sitio Pinhalzinho ideelle betingelser for dyrkning af kaffe af høj kvalitet på sine 13 hektar. Med en højde på 1.200 meter dyrker gården sorterne yellow catucai, bourbon og mundo novo.

Til forarbejdning af kaffen anvender producent Sergio Luis Ricetto en traditionel naturlig metode, der kræver mindre vand end andre teknikker. Hovedsæsonen for høst på Sitio Pinhalzinho er juli, hvor kaffen håndplukkes og tørres på terrasse. Vi har gang på gang været imponerede over kvaliteten af kaffen fra Sitio Pinhalzinho. Den har en fyldig, sirupsagtig krop og noter af tørret tropisk frugt med en afslutning som chokolade flapjack.

The Yellow Catucai at 1,200 meters is such a sweet, clean cup—I brewed it as a pour-over and got this nice lingering brown sugar finish. Sergio clearly knows what he's doing with that natural process. This one's earned a permanent spot in my rotation.
