Chiroso es una de nuestras variedades favoritas en Kiss the Hippo. Este tan comentado cultivar se creyó durante mucho tiempo una mutación local natural del bourbon, pero análisis genéticos recientes han revelado su origen en Etiopía, lo que explica sus deliciosos sabores florales e intensos a fruta.

Este lote en concreto proviene de Sebastian Gomez, un nuevo productor para nosotros, ubicado en el corazón del tradicional triángulo cafetero en Quindío. Este café presenta un perfil lavado tradicional con un proceso de fermentación extendida diseñado por nuestro buen amigo Felipe Arcilia de Jardines De Eden. Las cerezas enteras de café se someten a una fermentación al aire libre durante 24 horas, seguidas de 50 horas en contenedores sellados bajo estricto control de temperatura. Luego se despulpan, lavan y secan en camas africanas elevadas hasta alcanzar un 11% de humedad. El resultado es un café extremadamente vibrante, limpio y floral con notas de pomelo, lima y flores.

The grapefruit note is so bright and clean, it practically jumps out of the cup. I brewed this Chiroso at home and the extended washed process keeps everything crisp without any funky aftertaste. Definitely my favorite bag from this February harvest so far.

The extended washed process really lets the Chiroso's character shine—I brewed it as a pour-over and got that grapefruit brightness without any harsh acidity. At 1700-1800 masl, the finish is surprisingly sweet and lingering.
