Il Gui Ben proviene da Shigaoqing e Guiben, un'area tradizionalmente rinomata per il suo tè eccezionale. Situata in una remota zona dello Yunnan, a est della città di Pu'er e vicino al confine con il Laos, la produzione di questo caffè è guidata dal Sig. Tian Cai, Responsabile delle Operazioni Agricole per Yunnan Coffee Traders (YCT), mentre il familiare Sig. Tang gestisce le operazioni quotidiane della fattoria. Appartengono a un piccolo gruppo di famiglie di agricoltori nella regione di Guiben, nella provincia dello Yunnan. Le ciliegie vengono coltivate in queste fattorie e acquistate direttamente dai piccoli produttori locali.

La lavorazione Honey (al miele) può variare da mulino a mulino. Qui a Gui Ben, le ciliegie vengono prima spolpate a secco per rimuovere la buccia esterna e la polpa del frutto. Tuttavia, la mucillagine viene lasciata intatta, creando uno strato appiccicoso – simile al miele – sul chicco. I chicchi di caffè vengono poi distribuiti in strati sottili su letti rialzati per due o tre giorni, prima di essere raggruppati in strati più spessi e lasciati essiccare per altri 25 giorni prima della macinatura.

Pulled a shot this morning and the sweetness came through exactly as a honey process should—clean, syrupy body without any harsh bite. At 1,400–1,630masl from Xishuangbanna, the altitude really gives it a nice balance that works great as a pour-over too.
