L'anno scorso abbiamo visitato Jardines del Edén, una tenuta tanto bella quanto il suo nome suggerisce. Adagiata tra le colline del Quindío, il suo suolo vulcanico, le piogge costanti e il microclima fresco creano le condizioni ideali per un caffè straordinario. Guidata da Felipe Arcila, un produttore di quarta generazione che spinge i confini della lavorazione del caffè, la tenuta è un centro di innovazione.

Questo lotto presenta la Sidra, una varietà rara con radici etiopi. Un incrocio tra Typica e Bourbon, è nota per la sua acidità vinoso, la dolcezza stratificata e le delicate note botaniche: cattura in ogni sorso la vivacità di questa tenuta pionieristica.
