Kaku 位於孟連縣的主要咖啡產區帕亮，是由 Mr Li 經營的家族式農場與水洗處理廠。這裡處理來自周邊小農村落及其自有土地的咖啡果實。農場同時種植樟樹、天竺桂（用於傳統藥材）以及黃花梨樹作為遮蔭樹，使咖啡果實成熟速度較慢。
擁有超過 20 年經驗的李家，過去主要將商業等級的咖啡銷售給大型公司。然而，他們對品質的堅持以及農場的高海拔條件，造就了品質卓越的水洗咖啡批次。這個家族的正面影響力不僅止於咖啡，他們還為當地村民提供教育與醫療協助，因此在這個偏遠社區備受尊敬。
Brewed this washed Catimor as a pour-over and the green apple tartness hit right up front, then settled into a clean, limey finish. The altitude really shows in how crisp and bright the cup stays even as it cools. Solid daily driver for anyone who likes their coffee with some bite.
Honestly wasn’t expecting a washed Catimor to be this bright, but the green apple crispness hits right after brewing and stays clean as it cools. At 1600 masl, this feels like a proper Yunnan coffee that doesn’t need sugar. My new everyday bag.
The lime note really comes through in the finish, bright and clean, just as described. It brews up a crisp cup that’s perfect for a morning pour-over, though I wish the green apple was a bit more present. Solid everyday bean from Yunnan at this altitude.
