Minulý rok jsme navštívili Jardines del Edén, farmu stejně krásnou, jak její název napovídá. Ukrytá v kopcích Quindía, její sopečná půda, stálé srážky a chladné mikroklima vytvářejí ideální podmínky pro výjimečnou kávu. V čele farmy stojí Felipe Arcila, pěstitel již čtvrté generace, který posouvá hranice zpracování kávy – farma je skutečným centrem inovací.

Tato šarže představuje odrůdu Sidra, vzácnou varietu s etiopskými dědičnými kořeny. Kříženec Typicy a Bourbonu je známý svou vínovou kyselostí, vrstevnatou sladkostí a jemnými botanickými tóny – každý doušek zachycuje živost této průkopnické farmy.
