Pink Bourbon je jednou z našich nejoblíbenějších odrůd v Kiss the Hippo. Tento často diskutovaný kultivar byl kdysi považován za přirozenou mutaci Red Bourbon, přičemž třešně dozrávají do růžového odstínu. Nedávné genetické testy však odhalily jeho původ v Etiopii, což vysvětluje jeho nádherné květinové tóny a intenzivní ovocné chutě.

Tato konkrétní šarže pochází od manželů Aliria a Anayibe Muñozových. Společně tvoří Kolektiv Los Guacharos v Pitalito Huila. Kolektiv se postupně odklání od tradičních hnojiv a pesticidů ve snaze upřednostnit udržitelnost na svých farmách. Alirio se zaměřuje na specializaci na exotičtější odrůdy, včetně Pink Bourbon, Bourbon Aji, Chiroso a Sidra.

I’ve brewed a lot of Huila coffees, but this pink bourbon at 1650 MASL is something else—that anaerobic wash gives it a silky, almost wine-like body that carries through to the last sip. The fruit notes are bright but not sharp, and it’s easily the most interesting cup I’ve had this month.
